Kachori ( fresh Pigeon peas or pea)

Can be used green fresh peas (not the sweet variety) instead of pigeon peas. Also can be made ahead of time and frozen for a long time.

Method:

Crush pigeon peas in food processor for 3 minutes on high speed.

Mix rest of the ingredients with crushed pigeon peas.

Make small balls and leave aside.

Boil water add ghee/butter cooking oil and salt

Pour onto the flour boiling mixture mix with fork

Keep it covered till the dough cools down

Cut the dough into small balls, 2 cm in diameter, cover them

Open each ball into a small 3 to 4 inch disc

Place each pigeon pea ball in the middle of the disc

Rap it and roll in either bread crumbs or fine corn flour

Deep fry on low to medium heat till golden in color
