This is a healthy bread. I use King Arthur whole wheat flour which has 20 g of proteins. For kneading I use food processor with dough blade. It is not a fluffy bread, tastes very good slightly toasted. Can be cut into very thin square slices and well toasted to serve as an appetizer. Goes well with any type of cream cheese. The amount of water depends on the type of flour, the dough should not be very hard or soft.
