Method:
Wash and soak over night all the grains in hot water.
Grind into medium coarse batter with yogurt, add more water if necessary.
If the batter becomes runny add semolina to thicken it. Should be thick like cake batter
Add salt, ajwain, ginger, chili, jaggry, and turmeric powder.
Leave for fermentation for 6 hours or more.
Add shredded bottle gourd or any other greens.
Saute in 1 Tbs of hot oil, add first cloves and cinnamon then fenugreek, mustard seeds and in the end add asafoetida. soon after pour into the batter and mix well.
Add rest of the oil and ENO or baking soda mix well and pour immediately into a baking tray 13 x8 x 2 inches or 8 inch diameter round tray.
Spread evenly over the batter sesame seeds.
Bake for 45 minutes in preheated oven at 400 F, or when inserted knife comes out clean. Broil to make top layer brown.
