Famous all over Brasil, for appetizer make small as in figure. To serve during lunch or dinner make double the size. Usually they swell up while frying. Many people prefer row quibe to fried ones. Row quibe can be eaten with olive oil. Bulgur wheat can be bought in Indian food stores or Middle Eastern stores.
Method:
Wash bulgur wheat and leave in 2 cups of water for 45 minutes.
Strain the wheat in a fine cloth, squeeze off all the water.
Blend in food processor meat, onion, garlic, mint leaves, salt and pepper till homogenized.
Remove the mixture and mix with wheat, knead with hands till uniform. Taste salt.
Take a size of golf ball meat-bulgur wheat mixture and roll into spindle shape.
Deep fry in cooking oil on medium heat, till brown.
Serve with lime wedges.
