Method:
Blend all the liquid ingredients and half of the carrots for 3 minutes.
Sieve flour and sugar in a large bowl.
Add rest of the carrots and blended mixture to flour and mix well.
Add baking powder, mix well and pour into a greased and floured 13 x 9 x 2 inches baking tray or bundt pan.
Preheat the oven at 350F (180 C) bake 40 to 50 minutes or inserted knife comes out clean.
This is the best carrot cake I have ever eaten!
