Brasilian Coxinhas

Coxinhas are delicious, the name Coxinha derives from ‘coxa’ thigh.  It is a street food found in every corner in Brasil. It is a meal by itself. Everybody I know loves coxinhas, they can be big or small party size, can be filled in the middle with brasilian cheese ‘catupiry’.  Coxinhas can be frozen without frying. Fried coxinhas stay good in refrigerator for 3 to 4 days. Do not defrost frozen coxinhas before frying.

Method:

Filling:

Can be used chicken breast or ground chicken

Pressure cook chicken breast for 4 minutes, in instant pot or regular pressure cooker

Shred the Cooked chicken with fork

Sauté  garlic paste till golden

Add chopped onions, cook till transparent

Add shredded chicken without broth

Add tomatoes and tomato paste.

Add salt and black pepper to taste

After the mixture is almost dry

Turn off the stove

Add finely chopped parsley and cream cheese

Mix well, let it cool down

Dough:

Boil the chicken broth

Add butter

in a non stick pan put flour

Add,  mixing constantly broth

cook till it completely leaves the pan

Cool to room temperature, mixing once in a while not to form the crust.

Preparing Coxinhas;

Prepare egg and milk mixture

Take a golf size dough

Flatten it in your palm

put a spoon full of filling

Rap the filling and shape either in  coxinha or just leave it like a ball.

Deep each coxinha into milk and egg mixture

Soon cover it with bread crumbs

Make all the coxinhas first

Deep fry till golden
