Method:
Mix all the ingredients in a bowl, add water little by little to form a soft dough (like pizza dough). Use cold water for crisp roti or warm water for soft roti.
Leave the dough to settle down for 10 to 15 minutes. Divide the dough in 8 parts.
Warm up the skillet on medium heat.
Place parchment paper on kitchen counter and place one of the rice flour balls in the middle of the paper.
Wet your hand and pat it open in a round roti make a small hole in the middle. Place it upside down on hot skillet and remove the parchment paper. Let it cook for a few minutes.
Flip the roti spread 1 tea spoon of oil on it. Spread oil again on the other side of roti.
Press the roti to skillet each time when turned. Flip and cook on both the sides till crispy.
