Originally all the vegetables were partially cut length wise and stuffed with dry ingredients. As it is time consuming I make it as described below. Peanuts can be avoided in case of suffering from allergy.
Method:
Mix all dry ingredients, crushed garlic and chopped cilantro into a large non stick wok add oil, cook on a medium low heat.
Mean time cook separately each vegetable in a tightly closed microwave pan for 4 minutes.
Before taking potatoes and eggplant to microwave, drain off water completely from the veggies .
First cook potatoes then onions, eggplant and finally okra.
In the same sequence as each vegetable comes out from the microwave add to frying ingredients, mix and cover it tightly.
Keep the heat on low, cook for 20 minutes. Shake once in a while. Keep it covered all the time.
