In India it is called bharta. Baingan means eggplant. it is usually eaten with indian roti or parothas.
Method:
Microwave one large eggplant.
Scrape out the inner pulp and leave it aside.
Saute cumin seeds, garlic and ginger paste, onions and red bell pepper.
Add eggplant pulp, mix, add garam masala, ginger powder, turmeric and salt.
Mix, cover and cook.
Open the lid cook on high heat till the oil separates and gives little smoky flavor.
Garnish with chopped coriander leaves and green onion
