Mixed, Ginger, Turmeric and White Mango Turmeric (Amba haldi) Pickle

 

All the three are rhizomes are popular in India. Ginger and Turmeric are used in day today cooking in Indian cuisine. White Mango Turmeric (Amba haldi) is also known as Mango ginger mostly used row in salads or in pickles. All three rhizomes have medicinal values.

Lemon juice can be used instead of vinegar. Mustard dal can be substituted with crushed whole black mustard.

Method:

Peel and chop all the three rhizomes in food processor or can be cut into thin slices.

Add to chopped rhizomes rest  of the ingredients.

Test and adjust salt if necessary.

leave to marinate for a day

Store in refrigerator or in a cool place. When not refrigerated add more oil.
