Favorite of my whole family, specially of my grand children. For appetizer roll into medium pizza size and cut into small strips or squares.
Method:
Use unsalted butter, do not melt, cut into small squares before mixing to flour.
Put all dry ingredients in food processor mix on medium speed for 1 minute
Add butter and mix for 30 seconds
Add little by little cold water mix for 1 minute.
Remove the dough from food processor and knead with hand to form a stiff dough.
Cut the dough into small balls, of the size of a golf ball.
Roll each piece into a round disc about 3 mm in thickness.
Heat the oil to 375F or on medium heat. Slide fro the side of frying pan one by one Mathri into hot oil. The amount of Mathri into the hot oil depends on the size of pan.
Deep fry on medium heat into light pink color, drain and let it cool. Can be stored in a well sealed canister for more than a month.
This is a very good recipe it’s like my mom’s. It is just right. Dough seemed a little dry but I trusted the recipe and it turned out perfect. My guests finished all of them. The mathri is flaky and buttery, with the perfect amount of spice.
