Shrikhand (Indian desert)

One of the most delicious desserts, mostly, everybody loves it. Usually in Gujarat, India,the desserts are served with the main dish. It is served with plain puris.

Method:

Ready made yogurt can be substituted with home made yogurt.

Cover the open end of yogurt can with a kitchen towel (folded twice) or a smooth cloth and invert it in the strainer squeeze the can slightly from all the sides for the air to enter in the can or make a hole at the bottom of can for air to enter

Leave it in a cool place over night for the whey to drip out.

Remove the can, and flip the strained yogurt in a pan.

Remove the cloth, add sugar and the rest of the ingredients, mix with spatula at first.

To homogenize well mix for 2 minutes with hand mixer.

If used sliced almonds and pistachios add at the end after mixing with hand mixer.
