Kaju katli or kaju barfi, It is delicious when it is  freshly made and is very easy to prepare. It needs a few ingredients. It is made all over Indian subcontinent, usually in Diwali time. Instead of cardamom powder a few drops of rose water can be used.  It can be stored for a long time in refrigerator.  (Doce de castanha de caju è delicioso e fácil de fazer. Ingredients

  • 1 1/2 cups raw Cashews
  • 3/4 cup powder sugar (150g or 0.332Ibs)
  • 1/4 Tsp saffron/optional
  • 1 Tsp cardamom powder
  • 1/2 cup or 100ml water
  • 1 1/2 Tsp ghee

Instructions

  1. Measure the cashews
  2. Grind cashews into powder or use organic cashew powder
  3. Add cardamom to cashew powder
  4. Put ghee in a pan, add sugar and water
  5. Boil water and sugar on high flame, add saffron
  6. As soon as syrup boils add cashew powder
  7. Lower the flame to medium low
  8. Keep stirring till kaju mixture separates from pan and you see little ghee
  9. Remove and let it cool to warm
  10. Knead it for a minute to smoothen.
  11. Spread it on non greased tray
  12. Press and smoothen on top
  13. Cut into diamond shape
