Vindaloo Spices

Very authentic vindaloo spices. For mild vindaloo avoid cayenne powder and chili flacks. Please keep the doors and windows open when you roast the spieces. Also do not smell the aroma. Enough for 2 to 3 lbs of lamb or chicken.

Method:

Roast, cloves, Coriander seeds, mustard seeds , fenugreek seeds, cinnamon stick,  turmeric powder, cumin seeds,  black pepper corns, bay leaves, cardamom seeds, cayenne powder and dried chilly flakes in a frying pan for 5 minutes on medium low heat.

Grind them into fine powder after it has cooled down.
